There are plugins for your browser of choice that do this. Just enable it, go to youtube. Convert. Then disable/uninstall.
If you're really concerned and must do it, download Audacity and record the YT video while it's playing, then export to mp3.

I haven't heard of that one...will investigate. I don't have any respiratory illnesses.
